Egg Salad

I was making egg salad (low-fat version cuz Yes, it's on my diet!) for my lunch this morning and I couldn't help but think of 'M'. I had never eaten egg salad before meeting 'M', and after the first time I tried it, I LOVED IT! Which she knew, so she always made it for me when I visited. I would eat it for breakfast AND lunch when we visited. Finally, after several years, I asked her how to make it (not that it's hard, but I need directions for salad!), and I've been making it ever since.

I just wanted to take a moment and remember this; this memory of a woman I cared about...care about...very much.

Isn't it funny how simple things like this can bring back so many wonderful memories? The other day I watched 'Herbie Fully Loaded' with the Girls and it reminded me of all the times M watched the Herbie movies (and so many others) with Christopher and Me. I do remember how good her egg salad was, it was so much better than any other I have ever had. I guess because it was made for us with such love. :-) When I was in Girl Scouts, we always had to take a sack lunch for the ride to our overnight campouts, etc. I could never decide what kind of sandwich I wanted her to make me- I loved her egg salad and tuna salad equally. She would always make me one half of each because she knew I liked them both so much! It is memories like these that remind me what a wonderful grandmother she was. Thank you for bringing back some hapy memories with this post! :-)

You are so welcome. I just miss her so much, but I am so grateful for the few years of memories that I am lucky enough to have. She was an amazing woman.
